There’s something magical about a syrup infused with real vanilla beans. This recipe captures the delicate floral aroma and rich, caramel-like warmth that only comes from authentic Luna Vanilla beans. Perfect for sweetening coffee, cocktails, or desserts — it’s a staple you’ll find yourself reaching for every day.


Ingredients

  • 1 cup caster sugar

  • 1 cup water

  • 1 Luna Vanilla Bean, split lengthwise

  • ½ tsp Luna Vanilla Extract (optional, for extra depth)


Method

1. Prepare the Vanilla Bean
Using a sharp knife, split the vanilla bean lengthwise and scrape out the seeds. Set both the seeds and pod aside — you’ll use all of it to capture maximum flavour.

2. Make the Syrup Base
In a small saucepan, combine the sugar and water. Heat gently over medium heat, stirring until the sugar has completely dissolved and the syrup begins to shimmer.

3. Infuse the Vanilla
Add the vanilla seeds and pod to the syrup. Lower the heat and let it simmer gently for 5–7 minutes, allowing the syrup to thicken slightly and take on a golden hue.

4. Cool and Strain
Remove from heat and let the syrup cool with the vanilla pod still in it — this helps intensify the flavour. Once cooled, strain into a clean glass bottle or jar. If desired, add ½ tsp Luna Vanilla Extract for an extra layer of aroma and depth.

5. Store and Enjoy
Seal tightly and store in the fridge for up to 3 weeks. Use it to sweeten coffee, drizzle over pancakes, mix into cocktails, or pour over ice cream for a simple touch of luxury.
